Jo has been creating and decorating celebration cakes, cheesecakes, slices and biscuits for the past 40 years.
Jo’s passion for baking started at an early age baking with her mum.
“...I come from a family of home bakers, I remember getting proper bakers mini tartlet tins off my grandfather, who was an amazing baker, and making neenish tarts...”
After many years of baking for friends and family, Jo was asked to supply to a local café with home made sweets. Friands, Carrot Cake & Passionfruit Cheesecake being the must have favourites. This inspired Jo to open her own business in 2011 known as Jo’s Cakery, and now Flame Trees is where we find her creations today!
On 20th June 2017, after 5 years of working in cafes around the Clarence Valley, Amy’s love for serving coffee inspired her to join forces with Jo to open their own café. Serving BlackWhite Espresso paired with Jo’s delicious, sweet creations, it was an unbeatable match!
Our name was decided during a night out watching 'Jimmy Barnes; Working Class Boy'. Prior to performing one of our favourite songs 'Flame Trees', Jimmy explained that this song was written about our beautiful Jacaranda City. We knew in that moment there was no other name for our café.
